How do we do it?
The early harvest
We produce our extra virgin olive oils from early harvest olives, collected in October and November, which guarantees a high fruitiness and a high content of polyphenols, known for their health benefits.
From the tree to the mill, our olives are processed according to the highest quality standards. We mill them on the same day as harvesting to ensure their freshness and purity, resulting in oils with low acidity levels, around 0.1%.
Excellence in milling
We take care of every stage of the process, from receiving the olives to the final packaging. We use cutting-edge technology to guarantee cleanliness and precision, and the expertise of Begoña, our master miller, ensures an oil of the highest quality.
Thus, we guarantee that our EVOO is not only a product of excellence, but also a reflection of the care we put into each stage of its production.

A unique variety
The Verdeja variety has adapted over the centuries to the characteristics of the terrain and the extreme climates of the region, making it a unique and exceptional option, differentiating it from other better known and more widespread varieties.
This mountain olive grove is entirely dry-farmed and cultivated using traditional methods. This combination gives the extra virgin olive oils distinctive properties and qualities, setting them apart from other oils on the market.
